Perfect for occasion : This mango cake recipe easily serves for groups of 6 to 8 people and it is perfect for family gathering. You can even double or triple the quantity according to your party or occasion.

Ingredients

All-purpose flour : All-purpose flour / maida provides structure for any cake recipe. You can also use any gluten free flour, if you want to make gluten free cake.

Unsalted butter : Butter is added to give tenderness and moistness for the cake. It also adds richness and flavour.

Eggs : Eggs are added to bind the ingredients. It also gives leveling to the cake. I have also shared an eggless mango cake recipe in my blog.

Sugar : Sugar is added for the sweetness. You can adjust / substitute with other sweeteners like condensed milk, agave, coconut sugar, jaggery according to your preference. The texture and taste may differ.

Vanilla essence : A dash of vanilla essence enhances and compliments the mango cake flavour.

Baking powder & Baking Soda : Baking powder and baking soda is used to level the cake. 

Salt : A pinch of salt in any dessert/sweet recipe enhances and balances the sweetness .

Milk : Milk is used to bind the dry ingredients.

Mango : Mango is the main star ingredient of this recipe. Mango puree is added to this recipe. For extra flavour, you can even add chopped pieces of mango to the cake batter.

Sieve : Sieve the dry ingredients like all-purpose flour, baking powder, baking soda, salt separately before adding them into wet ingredients.

Pre heating : For any baking recipe, always preheat the oven. Set the temperature to 180 * C. 

Cake batter : Cake batter should be lump free. Mix them in a stand mixer or using an electric beater.

Mango Cake (Step by Step Pictures)

1)Grease a pan with oil and dust with flour. Preheat oven to 180 degree C.

2)Mix the dry ingredients in a bowl. Take flour in a bowl.

3)Add in baking soda

4)Add in baking powder

5)Mix well. This is your dry ingredients

6)Now lets cream the butter. Take butter in a bowl.

7)Add in sugar

8)Add vanilla

9)Add in some salt.

10)Mix well till creamy.

9)Add in eggs

10)Mix well till creamy.

11)Add in mango puree

12)Fold gently.

13)Add in half of the flour mix

14)Add in milk.

15)Add in remaining flour

16)Fold gently.

17)Spoon it into the prepared pan.

18)Bake till done.

19)Now make the glaze. Take mango puree in a sauce pan.

20)Add sugar

21)Heat till sugar melts.

22)Unmould the cake.

23)Brush the cake with glaze

24)Brush all over the cake.

25)Set aside for 1 hour. Slice and serve.

For a perfect mango glazed cake recipe, follow these tips and tricks:

  • Always measure and weigh the ingredients for baking using kitchen scale.
  • Sieve and add the dry ingredients with the wet ingredients mixture.
  • The butter, egg, milk and mango should be at room temperature.
  • Grease the baking tray with butter on all sides and dust them with all-purpose flour / maida.
  • After baking, insert a toothpick in the centre of the cake. If it comes without any batter, then it is perfectly baked. If not, bake it again for a few minutes.
  • Cool the cake completely, before Slicing.

5.Can I make a tier cake using this recipe?

Yes, of course you can make 2 or 3 tier cakes by doubling or tripling the ingredients.
