About No Bake Mango Bars
I had some leftover mango puree in the freezer, so I was thinking of new ways to indulge in mango dessert and this idea popped into my mind. Then I decided to make these no-bake bars. You know what it was a hit among my family .They are seriously so easy to make and require only minimal ingredients.
Why is it family’s favorite – No bake mango bars means no fuss ! These bars are approved by my toddler and they can be prepared using basic ingredients at your pantry. It will definitely become a favourite around the house for sure. The combination of mango layer and biscuit layer is perfect for a family gathering or kids party. They are easy to make and have everyone’s favourite ingredients , all stacked on top of one another.
No bake mango bars consist of two layers. First layer is prepared by solidifying the mango puree using gelatin mixture. The second base layer is prepared by mixing melted butter with powdered biscuits. This no bake mango bar recipe is so versatile. You can even try ‘n’ number of recipes like strawberry bar, chocolate bar, peanut butter bar etc.

Ingredients


Mangoes : During mango season, choose ripe mangoes with a sweet and fragrant smell. Mango provides sweetness and vibrant color.
Gelatin : Gelatin powder helps to solidify the mango and gives a firm and smooth layer.
Digestive biscuit : I have used digestive biscuits for the base layer. You can also use graham crackers or any cookies.
Butter : Butter is used to bind the grinded digestive biscuits. Use unsalted butter.
Water : Water is used to dissolve the gelatin.
Yellow food color : Adding food color is optional, but it enhances the vibrant color of the mango.
Sweetened condensed milk : Condensed milk provides the sweetness for the mango layer. It can be adjusted / substituted according to your preference.

Gelatin Mix : First mix gelatin with water. Let it dissolve. Then start to cook them in low flame.
Biscuit layer : For biscuit layer, I have used digestive biscuits. As it contains less sugar compared to other cookies/ crackers. Adjust sugar according to your taste buds. Powdered them finely. Make sure the butter should be at room temperature before melting. Mix the melted butter with crushed biscuits. Set them in a pan.


No Bake Mango Bars (Step by Step Pictures)
1)Take some digestive biscuits in a blender.


2)Powder till fine


3)Take it in a bowl


4)Add in some melted butter


5)Mix well


6)Spoon this into the pan


7)Press to flatten it


8)Take mango pulp in a blender


9)Puree till smooth


10)Take gelatin in a sauce pan


11)Add some water and let it sit for 5 mins. Now heat it gently so the gelatin dissolves.


12)Add in sweetened condensed milk.


13)Mix well


14)Add in mango pulp


15)Mix well


16)Add in some food colour


17)Add few drops of mango extract if you have


18)Whisk well

20)Chill this for few hours

Yes, you can use any store bought cookies or graham crackers for a biscuit layer. But the taste and texture may differ. Adjust the sweetener accordingly.
2.What is gelatin ?
Gelatin is a translucent, colorless, flavouring agent. An animal based collagen. It helps to thicken and solidify the liquids. It is likely used to prepare jellies, mousse, and marshmallows .
3.Can I substitute gelatin with agar agar ?
Yes, you can use agar agar for mango solidified layers. It is a vegan gelling agent. It has more gelling power than gelatin. So try to use minimal.
4.Can I use cornstarch instead of gelatin ?
Yes, you can use cornstarch for binding. But it won’t create the smooth, firm texture of mango layers.
5.Can I add a cream cheese layer?
Definitely a yes ! You can add a cream cheese layer in between biscuits and mango layer. It elevates the taste to the next level. And also it provides a sweet, tangyness to the bar.
