I make egg curry often. Believe it or not, even today i made a version of egg curry and served it with ghee rice. I love making it for lunch, because it taste so yummy with hot rice so much. I personally like it so much. Eggs are such a versatile ingredient, you can turn them into a tasty meal within minutes.

Boil room temperature eggs with a pinch of salt for 8-10 minutes. Let the eggs sit in the hot water for 5 minutes, then tap and peel. You’ll get neat, easily peeled eggs. Before adding the eggs to the curry, crack them open just enough to allow the masala to seep inside. Boil eggs ahead of time and store them in the fridge for convenience. Adding freshly grounded ginger garlic paste elevates the taste to the next level. Lightly fry the boiled eggs in a pan by adding oil,turmeric powder,chilli powder, salt will enhance flavour and add color to the egg masala.

Curry Sauce

First, roast the spices for a richer, more complex flavor. When onions are being fried, add a slit green chili for added spiciness. The gravy can be pre prepared and stored in the fridge for up to 7 days. For a good curry, choose quality ingredients. Saute the onions and tomatoes well until they soften, and cook until the raw smell of the spices disappears. Simmer the curry for the best flavor. To achieve a smoother texture, use yogurt or coconut milk. If the gravy is thinner then whisk two eggs and mix it in the gravy. It thickens the curry.

How to Cook Eggs (Hard Boiled)

  • First you need to bring water to boil in a kadai. Then add some vinegar to the water, which helps to remove the sulphuric smell and makes peeling of egg shells easy. 
  • After adding the vinegar, slowly add the eggs to the boiling water. Cook for 5 to 10 minutes.
  • Immediately after taking the eggs from the hot water, transfer them to the ice cold water in a bowl.
  • Adding in ice cold water helps contract the shell and peeling the shell will be easy. Yellow color indicates it’s not overcooked.
  • For Perfect soft boiled eggs, cooking time will be 5 minutes.

Yes you can also add cashews or poppy seeds.

Yes, canned or homemade coconut milk can be used instead of coconut paste. Adding milk will taste like a Kerala egg curry which usually goes with appam, idiyappam.

To prevent breaking, gently place them into the curry base and simmer for a few minutes so you don’t overcook it.

Eggs are generally easy to cook. Gently place the eggs into the boiling water and let it cook for 10 minutes. Set the timer. After taking eggs from boiling water, immediately place them into ice cold water which helps toeasily remove the shells from the eggs.
