In this blog post I have shared authentic method of making a street style masala toast along with homemade sandwich masala with step by step pictures and video.
Mumbai Masala Sandwich
I made this sandwich few weeks back and totally love with it. The combination of the green chutney, aloo masala and sandwich masala is just perfect. I had my toaster which was sitting in the corner of the cupboard without using, so used that to make this sandwich. But you can make this in regular tawa or grill pan. This makes a filling breakfast or a light lunch or dinner as well.
About Mumbai Masala Sandwich
Delicious masala sandwich which is popular in and around Mumbai. It is one of the most popular street food dish. This sandwich is also known as Mumbai masala sandwich, masala toast, Bombay masala toast, aloo masala sandwich. Some other popular Mumbai street sandwich are chutney sandwich, veg cheese toast, triple grilled sandwich.
This delicious masala sandwich is made with bread that is stuffed with an Indian spiced potato filling layered with crunchy vegetables then toasted until crisp in butter. You can toast the sandwich in a sandwich toaster, grill pan or tawa. You can customise this sandwich as per your liking. Add any toppings as you prefer like onions, cucumbers, cheese slice, tomatoes, lettuce.
Traditional street style masala toast is made in a cast iron toaster with handle. It is cooked on open flame till crispy. Authentic street style masala toast is served with extra green chutney and spicy sauce sprinkled with sev which is loved by everyone.

Masala Sandwich Ingredients
Potatoes – use large potatoes which are pressure cooked till soft, peeled and then mashed. You can boil the potatoes in pressure cooker or in a sauce pan. You can make the potato filling a day ahead also.
Ginger, Garlic & Chillies – this is the main flavouring. Ginger, garlic and green chillies are ground into a paste and added in the sandwich.
Tempering – this recipe has simple tempering like mustard and curry leaves. But you can add cumin seeds if you want.
Green peas – I used frozen green peas mainly for colour and texture. You can add chopped carrots and green beans also.
For Making Mumbai Masala Sandwich
Bread Slices – whole wheat bread, white bread or sandwich bread can be used as per your preference. Multigrain bread makes a healthy choice.
Green Chutney – I used homemade green chutney. Green chutney is available readymade in stores as well.
Sandwich Masala – Sandwich masala is special blend of spice made specially for Mumbai style sandwich. I have a homemade sandwich masala recipe already shared on this blog.
Butter – butter is what makes this sandwich so special. make sure you use generous amount of butter for toasting the sandwich.
Toppings – lettuce, cucumber, onion, capsicum are some of the delicious toppings. You can use sev, cheese as well.
How to Make Sandwich Masala at Home
Have you ever wondered what is the special powder that a sandwich wala sprinkle over the sandwich. Or how come the sandwich we buy in street food taste so good. This is the answer. The special sandwich masala that is used in mumbai street style sandwiches.
This is one of the special powder which is used all over Mumbai street shops for their sandwiches. I made several sandwiches using this powder and it turned out so yummy. I loved the tangy spicy taste which the powder gave to the sandwiches and it transformed the plain veg sandwich to a new level. If you want a step by step tutorial, check this sandwich masala recipe.
Cumin seeds alone is roasted separately and ground with the other ingredients.
Sandwich Masala Ingredients
- ½ cup Cumin Seeds
- 15 Cloves
- 1 stick Cinnamon
- 2 tbsp Whole Black Pepper
- 1.5 tbsp Fennel Seeds
- 1.5 tbsp Black Salt
- 1 tbsp Dry Mango Powder | Amchoor Powder
How to Make Mumbai Masala Sandwich (Stepwise Pictures)
Boiled & Mashed Potatoes
1)Wash and cut potatoes in half. Take them in a pressure cooker, cover with water and pressure cook for 3 to 4 whistle. Once the pressure is released, open the cooker and strain the potatoes in a colander. Allow the potatoes so it cool for 10 minutes. Now peel off the skin.
Roughly mash the potatoes using fork or potato masher. Set aside.
Making Potato masala
2)Heat oil in a saute pan or frying pan. Add in mustard seeds and allow them to splatter.
3)Add in curry leaves and mix well.
3)This is the main flavouring for the potato masala. I ground ginger, garlic and green chillies to a fine paste. Add this paste into the oil.
4)Mix and cook the ginger garlic chilli paste for 1 to 2minutes till raw smell leaves.
5)Add in some salt and turmeric powder for colour. At this point you can add in sliced onions if you want.
6)Cook the mixture till oil separates. Now the raw smell from the ginger garlic must have gone.
7)add in green peas and mix well. I used frozen green peas which I defrosted. If you are using fresh green peas, you have to boil it separately before adding that in.
8)Add in the boiled mashed potatoes in.
9)Mix it really well. Finally you can add some coriander leaves and lemon juice if you want to. This is your potato masala.
Mumbai Masala Sandwich Ingredients
10)This is a sandwich, so you can customize it as per your liking. You can add or skip ingredients that you like. In this sandwich I have used these ingredients.
Assembling the Sandwich
11)Take bread slices. Make sure you use sandwich bread which is slightly larger in size to fit all the ingredients we are going to add in.
Spread the bread slices with green chutney.
12)Now sprinkle some lettuce on top. You can add or skip any of the ingredients.
13)Arrange cucumber slices. Make sure you thinly slice them using a mandolin.
14)Sprinkle generously with sandwich masala.
15)Now take a scoop potato masala and spread it over the cucumber.
16)Sprinkle with sliced capsicum. This adds crunchy texture that the sandwich needs.
17)Top with some sliced onions.
18)Sprinkle the top with some more of the sandwich masala.
19)Cover with another slice of bread.
Grilling the sandwich
20)Now you can use a sandwich maker, grill pan or regular frying pan for cooking sandwich. I used my sandwich toaster. Add butter on top and bottom of the bread and place it into the sandwich maker.
21)Toast till cooked. Spread some more butter on top if needed.
